The " Piennolo Tomato " , the "Patanara" ecotype , is one of the most typical products of Agerolese agriculture. It stands for authenticity, hardiness and organoleptic quality. The ancient practice of " piennolo," conservation, a technical feature for patching together some clusters or "shells" of ripe tomatoes, to form a large cluster which is then suspended in ventilated rooms, thus ensuring the precious harvest optimal preservation until the end of winter. During the conservation period the tomatoes, while losing its firmness, takes on a unique and delicious flavor .
