Fusilli with zucchini and smoked cheese (provola)

fusilli zucchine provola

Ingredients for 4 people
Fusilli pasta type 350 g.
2 zucchini
Smoked cheese 150 gr.
Extra virgin olive oil 40 gr.
Onion to taste
Salt to taste
fresh basil

 

Preparation
Wash the zucchini and cut into slices not too thin. Heat the olive oil in a pan, add the onion and zucchini. Add salt, to taste, and season with a few basil leaves. Cover with a lid and cook for about 20 minutes. Boil the pasta for the time indicated on the package. Meanwhile, cut the smoked cheese into small cubes. Drain the pasta, season it with the zucchini and provolone. Put it again on the fire for about two minutes so that the provola begins to melt. Serve immediately.
